Like all of you, I have been looking forward to the coming days. When we closed our restaurants in March, we knew we would be back—we just didn’t know when. Nobody could have imagined how long the wait would be, but we knew we had to take a break to preserve and promote the safety, health, and well-being of our staff and our guests. That has always been our highest priority, and it always will be. The time has come, of course, to now welcome you back.

I am surrounded by an incredible team, who has been planning since that day in March to make your next visit to Carson Kitchen the safest possible. We have developed an extensive safety plan, consulting experts and every local, state, and federal guideline for the next steps. While we could have opened earlier, we have waited deliberately to make sure that we had the best policies and procedures in place and that everyone on our team was trained as well as possible.

This moment isn't simply a return to business. It's a return to human connection. It's about seeing old friends and making new ones. The most profound connections we all make are the ones we share over a great meal, a bottle of wine, or a delicious cocktail. These connections are why we do what we do. It’s why we love our neighborhoods in downtown Las Vegas and in downtown Alpharetta. I am happy to announce that both locations are now open again!

Specializing in creative American cuisine and thoughtfully crafted cocktails, Carson Kitchen is a cornerstone of the Downtown Las Vegas dining scene. Carson Kitchen is built on a philosophy of reimagined comfort food prepared with approachable fine-dining ingredients.

The restaurant opened in 2014, a partnership between chef and restaurateur Cory Harwell and his dear friend, the late chef Kerry Simon. Designed to bring a carefully curated experience to our unique neighborhood, Carson Kitchen features a contemporary bar, open kitchen expo counter, community tables, and an outdoor rooftop and bar. Guests can also take in a cocktail and relax in the courtyard of our home in the repurposed mid-century John E. Carson Hotel.

    Simply put, Kerry Simon’s new restaurant is the most exciting thing to happen to the Downtown dining scene. It also offers the most interesting food we’ve seen from the superstar chef in years.

    Calling Carson Kitchen a trailblazer is an understatement. It not only blazed a trail, it started a revolution. There are at least a dozen great spots to eat in Downtown now, all of which owe a debt of gratitude to the vision of Cory and Kerry
